They do not see the real names of tables and fields, but see only the table names and field descriptions, which you (as the developer) will allow them to see (e.g. "Customer Address" instead of Cust.Addr).
Operators can be spelled out (e.g. "is equal to" instead of the mathematical symbol =). Field values can be replaced with descriptions (e.g. "MasterCard" instead of actual values like "MC") that make the interface more friendly.
